Orange and Poppy Seed Syrup Cake

Ingredients:

Cake:

  • 1/3 cup poppy seeds
  • 3/4 cup milk
  • 2 cups self-raising flour
  • 200g soft butter
  • zest of 1 large orange
  • 1/2 cup castor sugar
  • 3 eggs
  • 1/2 cup orange juice

Syrup

  • 1/2 cup castor sugar
  • 3/4 cup orange juice
  • zest of 1 orange

Method:

  1. Prepare 20cm round cake tin and pre-heat oven to 160’c.
  2. Beat together butter, sugar and rind.
  3. Beat in eggs one at a time.
  4. Add flour, juice, milk and poppy seeds, folding to combine.
  5. Bake for 40-50 mins, until skewer comes out clean.
  6. Allow to cool slightly.
  7. Make the syrup by placing all ingredients in small saucepan and stirring over heat until sugar dissolves.
  8. Increase the heat and boil for 5 minutes or until thick.
  9. Make holes in cake with a skewer and pour syrup over the cake.
