Yo-yo cookies

Ingredients:

Biscuits:
370g butter
2/3 cup icing sugar
3 cups plain flour
2/3 cup custard powder

Filling:
3/4 cup icing sugar
3 tblsp butter
3 tsp custard powder
3/4 tsp vanilla

Method:

1. Pre-heat oven to 160c (fan-forced)
2. Cream butter and icing sugar
3. Mix in sifted flour and custard powder
4. Form into balls and flatten slightly with a fork as you place on a baking tray
5. Bake for about 15 minutes until lightly golden
6. Transfer to a wire rack to cool
6. Cream together all filling ingredients
7. Use filling to sandwich together the biscuits
