Oatmeal sultana cookies

Ingredients:

115g butter
2/3 cup brown sugar
1 egg
1/2 tsp vanilla
3/4 cup plain flour
1/2 tsp baking soda
1/2 tsp cinnamon
1/4 tsp salt
1 1/2 cups rolled oats
3/4 cup sultanas

Method:

  1. Preheat oven to 160c
  2. Cream together butter and sugar
  3. Beat in egg and vanilla until smooth
  4. Add in flour, baking soda, cinnamon and salt
  5. Stir in the oats and sultanas
  6. Roll small mounds of mix (around 1 tblsp) into balls and flatten slightly on a baking tray
  7. Bake for 12 to 12 minutes until golden on edges
  8. Let them sit on baking tray for 5 minutes before transferring them to a baking rack to cool completely
