Mel’s chow-main sans cabbage


3 medium carrots
2 medium zucchini
300g button mushrooms
1 onion
500g mince meat
1 1/2 cups rice
2 tblsp curry powder
500ml beef stockOlive oil


1. Dice carrots and zucchini and slice mushrooms, set aside
2. Finely dice onion and fry in olive oil in a heavy based pan until translucent
3. Add mince meat to pan and brown4. Add curry powder and fry for 30 secs until fragrant
5. Add zucchini and carrots, stir through, then add mushrooms
6. Add rice and stir through again to coat rice in oil and curry powder
7. Add stock. At this stage you can add stock intermittently and stir the mix continuously – as when making risotto or if you have a very heavy pan with a lid, like besemer, you can add most of the stock at once and cover with a lid to finish cooking
8. Cook until the rice and vegetables are tender and most of the stock as been absorbed. Add more water during cooking if necessary
